It all started last July while the Payson Premier Dental team was attending the Galler Reingage Convention in Las Vegas. Kayla and I had maybe woken up a bit later than the rest of the team, who were already enjoying themselves in the pool before our classes started. So, we decided to grab some breakfast at the Terrace Pointe Café since it was right by the pool. I ordered the Chocolate Filled Croissant and Kayla ordered the Croissant French Toast. While we were waiting for our food to arrive, we were pondering our decision to eat here as many customers were being mugged by blackbirds. These birds had no fear and were ruthless in the pursuit of their own breakfast!
Just then our food arrived, so we started eating. My chocolate croissant was good, as it always is, and all was normal until Kayla took the first bite of her Croissant French Toast. I could tell by the look on her face, that this was a life changing experience! She had a look as if she had found Nirvana….and she was willing to fight those birds for every bite of it! Bite after bite, we all knew how amazing this french toast was. At one point, she contemplated using it as a face cream, so she could continue to smell it once it was gone but decided against it due to the sticky nature. Luckily for me, she thought it was so delicious that she had to share. I have to admit, I was skeptical and thought it couldn’t possibly be that good. Oh, but it was! She was right! It was about the greatest thing I have ever eaten, and even though we were stuffed, we finished that whole plate….and wished we could have found room for seconds.
Sadly, but with very contented bellies, off we went to a full day of learning (but still dreaming about the French toast). After our classes, Kayla had the most brilliant idea to go to the café and see if we could get the recipe. But alas, our hopes were crushed; they were closed, and we had to leave in the morning before they opened. Then we had the genius idea to ask the Oracle, the knower of all things! (Google) To our dismay, the Terrace Pointe Café apparently keeps that recipe a closely guarded secret. Next, I tried Pinterest, because you can find anything on Pinterest, right?? Nope! No luck there either.
Finally, I just decided to try to make it on my own, here is the recipe I used. Not quite as life-changing as the original, but still a pretty tasty second.
FRENCH TOAST NIRVANA
- 2 eggs
- Splash of milk
- 1 tsp vanilla
- Cinnamon to taste
- Lemon and Coconut yogurt mixed together with a little honey.
- Berries of your choice
- Pure Maple Syrup
- Mix together eggs, milk, cinnamon, and vanilla.
- Cut the croissants in half and dredge it in the mix.
- Fry in butter on both sides.
- Mix together lemon and coconut yogurt with a little honey.
- Top the French toast with maple syrup, the yogurt mixture, and some fresh berries.
It was a pretty delicious imitation! (I still need to make it for Kayla though)
